Eggs and bacon are overrated.
If you’re a vegan like me, or just trying to eat more plant-based, and have wondered where to turn for a delicious breakfast, you’ve come to the right place.
Here’s a list of some great vegan breakfast ideas!
OATS
Oatmeal is the king of breakfast foods. It’s hearty, delicious, incredibly healthy, and versatile.
You can eat oatmeal hot or cold – such as overnight oats, or muesli – and can add a variety of other ingredients to it such as fruit, seeds like flax or chia, protein powder, peanut butter, cinnamon, vanilla, syrup, etc.
There are endless ways to flavor up oatmeal.
And speaking of it being healthy, some of the benefits of oatmeal include:
- Great source of fiber
- Complex carbs for better energy
- Low in fat
- Helps control blood sugar
- Helps lower cholesterol
- Helps improve gut health
- Good source of plant protein
- Satiating – keeping you feeling full
Oatmeal has been for years, and still is, one of my staple foods. And although people will claim it has too many carbs and will cause weight gain, I was eating a lot of it when I lost nearly 50lbs and got down to the leanest I had ever been.
And I continue to eat the hell out of it whether I’m looking to bulk up a little, or lean down.
Oats for the win.
TOFU SCRAMBLE
One of my other personal favorites.
Tofu scramble is a much healthier, and more ethical, take on the classic scrambled eggs.
Easy to make, and only takes around 5 to 10 minutes, it’s one of the best vegan breakfast options!
Here’s a link to an article I wrote about how to make the ultimate tofu scramble!
And in terms of health benefits, tofu scramble:
- Is a great source of complete protein
- Contains healthy fats that are beneficial to the heart and can help lower cholesterol
- Contains some fiber
- Contains isoflavones which have been shown to help lower cancer risk
- Is a good source of iron, calcium, and other nutrients
PLANT BASED YOGURT W/ GRANOLA, FRUIT, OTHER TOPPINGS
Classic yogurt and granola.
And the good news is that plant based yogurts are becoming more popular and available.
Mix your favorite with your choice of granola, then add other toppings such as berries, bananas, kiwi slices, chia or flax seed, etc!
TOAST OR BAGEL W/ AVOCADO OR PEANUT BUTTER
Speaks for itself. Either combination you choose will be fucking delicious.
Both avocado and peanut butter, as well as other nut butters, are healthy sources of fat.
And choosing a whole wheat or whole grain type of toast or bagel will provide fiber and a little more protein.
Add a piece of fruit or two on the side and you have yourself a simple, healthy, and delicious breakfast.
MOST CEREALS
A lot of the common breakfast cereals are vegan friendly! Just add your favorite plant-based milk and wala.
PANCAKES & WAFFLES
Two of my other personal favorites, and so easy to make vegan!
The amazing food blog, Nora Cooks, lays out the simple ingredients you need to make vegan pancakes (waffles are pretty similar).
- Flour
- Baking powder
- Salt
- Sugar
- Soy milk
- Water
- Oil
You can also add things like cinnamon for a flavor boost.
PROTEIN BAR OR SHAKE
There are more and more vegan protein bars and shakes available now, which is awesome.
Super convenient, and a great protein source.
Take one of those, add a piece of fruit or two, and you got yourself a simple and nutritious breakfast.
SMOOTHIES
Throw a bunch of healthy shit into a blender and BAM, a delicious, filling, and quick breakfast option!
And a super easy way to get in a good serving of things like fruit & greens!
To boost protein, add a scoop or two of protein powder to your smoothie.
Some of my other favorite ingredients are:
- Oats
- Berries
- Banana
- Leafy greens
- Chia or flax seed (ground)
- Plant milk
